Ingredients for Meringue

  • Egg whites: 6
  • Granulated sugar: 10.6 oz (300 g)
  • Vanilla extract: 2 teaspoons
  • Lemon juice: 1.5 teaspoons

Ingredients for Curd

  • Mandarins: 6–8
  • Sugar: 4.6 oz (130 g)
  • Egg yolks: 6
  • Unsalted butter: 3.5 oz (100 g)
  • Pinch of salt

Ingredients for Cream and Topping

  • Heavy cream (33% fat): 15.2 fl oz (450 ml)
  • Powdered sugar: 2–3 tablespoons
  • Mandarins: to taste
  • Pomegranate seeds: to taste

Instructions

  1. Prepare the Dough:

    • In a mixing bowl, combine the flour, salt, and instant yeast.
    • Add 1 tablespoon of olive oil and warm water, then knead to form a soft dough.
    • Cover the dough with a cloth or plastic wrap and let it rest at room temperature while you prepare the other ingredients.
  2. Make the Sauce:

    • Mince the garlic using a garlic press.
    • Mix the minced garlic with the dried basil and tomato sauce in a bowl.
  3. Prepare the Toppings:

    • Slice the mozzarella cheese into thin pieces.
    • Grate the Parmesan cheese finely.
    • Cut the tomatoes into thin rounds.
  4. Shape the Pizza:

    • Once the dough has risen, gently knead it again and divide it into two equal parts.
    • On a floured surface, roll out one portion of the dough into a thin circle, about 10 inches (25 cm) in diameter.
    • Transfer the rolled dough to a lightly floured baking sheet.
  5. Assemble the Pizza:

    • Spread half of the tomato sauce over the prepared dough.
    • Evenly distribute half of the mozzarella and tomato slices on top.
    • Drizzle with a little olive oil.
    • Repeat the process for the second pizza.
  6. Bake:

    • Preheat your oven to 464°F (240°C).
    • Bake the pizzas simultaneously or one at a time for approximately 8–10 minutes until the crust is golden and the cheese is bubbly.
